Today's Recipe: Cranberry Cake by Melissa Blenker October 16, 2014 Community Insurance & Associates insures a variety of businesses. Locally, we have cranberry farmers that work hard to harvest these delicious little berries. Cranberry harvest is currently in full effect. Try out this delicious cranberry cake recipe that is compliments of Cher Martin. Ingredients: 1 cup sugar 1 cup sour cream 1 egg, beaten 1 tsp. baking soda ½ tsp. salt 1 ½ cups flour ½ tsp. vanilla 2 cups cut up cranberries or 2 cups diced rhubarb Directions: 1. Mix all together except cranberries/rhubarb. Stir in cranberries/rhubarb. 2. Spread into a 9×13 greased pan. Put ½ cup brown sugar & ½ cup chopped nuts over top. 3. Bake for 40 minutes at 350˚. Sprinkle with powdered sugar while warm. Top with whipped cream when serving.
