Recipe of the Month: Pumpkin Bars

The kids are officially back in school and the weather is starting to cool off meaning fall is on its way.  Bring on the colorful leaves, caramel apples, and of course recipes using pumpkin.  Our agent Melissa shared this easy recipe for Pumpkin Bars with us and it’s perfect for any fall party!

Pumpkin Bars

Ingredients: 

  • 4 eggs
  • 2 Cups sugar
  • 1 1/2 sticks butter, melted
  • 2 cups pumpkin (if using canned, use regular or pure pumpkin, not spiced)
  • 2 Cups flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. cloves 
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg 
  • 1 Cup nuts, chopped (optional)

Mix the eggs, sugar, butter, and pumpkin.  In a separate bowl, mix flour, baking soda, baking powder, cinnamon, salt, cloves, ginger, nutmeg, and nuts.  Add wet ingredients to dry ingredients and stir until combined.  Do not over stir or bars will be dry.
Grease a 15 1/2; in. by 10 1/2; in. by 1 in. pan.  Cook at 350 degrees for 30 minutes.  Let cool, then frost with cream cheese frosting.

Frosting

Ingredients: 

  • 3/4 stick butter
  • 3 oz. cream cheese
  • 1 Tbsp. half & half
  • 1 tsp. vanilla
  • 3 Cups powdered sugar

Combine ingredients until everything is incorporated.  Spread on pumpkin bars.


You can easily whip up a batch of these bars for any occasion this fall.  Packer parties, parent-teacher nights at your child’s school, Halloween parties, or any other get together will be better with these tasty bars.  Where will you take these treats?
