Let’s kick off National Salad Month with a super easy and delicious recipe. This is the perfect lunch option, or something to bring to a summer get together.
• 1 seedless cucumber
• ½ cup of plain Greek yogurt
• 1 tablespoon of dill
• 1 tablespoon of dry ranch seasoning
• 4 or 5 grape tomatoes
Serving size: 2
Begin by slice the ends off of the seedless cucumber. Next, cut the cucumber down the middle so that it is sliced into two halves. Now you can slice the cucumber vertically until it is all half-slices.
Place all of the cucumbers into a mixing bowl and add the ½ cup of plain Greek yogurt. Next, add the dill and ranch seasoning. Mix the cucumber, yogurt, dill, and ranch until the cucumbers are completely covered with the mixture.
Refrigerate salad until ready to be served. Garnish the top of the salad by slicing the grape tomatoes into halves. Scatter the tomato slices across the top of the salad.
